  • 4-6 pieces Bone-in, skin-on chicken thighs about 2-3 lbs total
  • 1-2 tablespoons Olive oil
  • 1 teaspoon Salt or to taste
  • 1/2 teaspoon Black pepper freshly cracked is best
  • 1 teaspoon Garlic powder
  • 1/2 teaspoon Onion powder
  • 1 teaspoon Smoked paprika
  • 1/2 teaspoon Dried thyme or oregano
  • chopped Fresh parsley or chives Optional garnish

Instructions
 

Preparation

  • Preheat your oven to 400°F (200°C) and prepare a baking sheet with parchment paper or foil, or use a wire rack.
  • Pat the chicken thighs dry with paper towels to ensure crispy skin.

Seasoning & Baking

  • In a small bowl, combine salt, black pepper, garlic powder, onion powder, smoked paprika, and dried thyme or oregano.
  • Drizzle olive oil over the chicken thighs, then generously rub the seasoning mixture over all sides.
  • Place the seasoned chicken thighs skin-side up on the prepared baking sheet, ensuring some space between each piece.
  • Bake for 35-45 minutes, or until the internal temperature reaches 175°F (80°C) and the skin is golden brown and crispy.

Resting & Serving

  • Remove the chicken from the oven and let it rest on the baking sheet for 5-10 minutes.
  • Garnish with fresh parsley or chives, if desired, and serve hot.

Notes

For extra flavor, you can marinate the chicken for at least 30 minutes or up to 4 hours in the refrigerator. Adjust seasoning to your personal preference; feel free to add a pinch of cayenne for a little heat!
