Ingredients
  

Truffle Base

  • 8 ounce cream cheese softened
  • 3 cups powdered sugar
  • 1/2 cup key lime juice freshly squeezed
  • key lime zest from 1-2 key limes

Coatings

  • 1 cup graham cracker crumbs
  • 1 cup white chocolate melts optional, for alternative coating

Preparation

  • In a large bowl, beat the softened cream cheese with an electric mixer until smooth and creamy for 1-2 minutes.
  • Gradually add the powdered sugar, mixing until smooth after each addition, scraping down the bowl as needed.
  • Pour in the key lime juice and stir in the lime zest on low speed until just combined, being careful not to overmix.
  • Cover the bowl and refrigerate the mixture for at least 2-3 hours until firm enough to roll.

Assembly

  • Once chilled, use a small cookie scoop or spoon to portion the mixture and roll each into a 1-inch ball.
  • Roll the truffles in graham cracker crumbs, or if using white chocolate, melt it and dip each truffle, letting excess drip off onto parchment paper.
  • Refrigerate the coated truffles for at least 30 minutes to firm up completely before serving.

Notes

For best results, ensure the cream cheese is fully softened before beating. Adjust the amount of key lime zest to your personal taste preference. These truffles are best stored in the refrigerator and can be made a day in advance.
