Ingredients
  

Salad

  • 4-5 medium-sized, ripe, and juicy tomatoes
  • 1 English cucumber or 2 small Lebanese cucumbers
  • ½ small red onion
  • ½ cup chopped fresh flat-leaf parsley
  • ¼ cup chopped fresh mint leaves

Dressing

  • 3 tablespoons extra virgin olive oil
  • 2 tablespoons freshly squeezed lemon juice
  • 1 teaspoon sumac optional, but highly recommended
  • Salt to taste
  • Freshly ground black pepper to taste

Instructions
 

Preparation

  • Wash and dice tomatoes into bite-sized pieces and place them in a large mixing bowl.
  • Wash, peel or scrub, and dice the cucumber to match the tomato size, then add to the bowl.
  • Peel and thinly slice or finely dice the red onion; optionally soak in cold water for 10-15 minutes if too strong, then drain and add to the bowl.
  • Roughly chop fresh parsley and mint, then add to the bowl with the other vegetables.

Dressing and Serving

  • In a separate bowl, whisk together olive oil, lemon juice, sumac (if using), salt, and black pepper until combined.
  • Pour the prepared dressing over the chopped vegetables and herbs.
  • Gently toss all ingredients with a large spoon or tongs until evenly coated, being careful not to mash tomatoes.
  • Serve immediately for optimal flavor and texture.

Notes

For an extra touch of flavor and visual appeal, consider garnishing the salad with a sprinkle of additional sumac or a few fresh mint leaves just before serving. If preparing ahead, keep the dressing separate and combine just before serving to prevent the vegetables from becoming soggy.
