  • 1 lb Shrimp (peeled, deveined, tails on or off)
  • 1 bunch Asparagus spears (about 1 lb), trimmed
  • 4 Garlic cloves fresh, minced
  • 2 Lemons (1 for juice, 1 for zest)
  • 3 tablespoons Unsalted butter
  • 1 tablespoon Olive oil
  • 2 tablespoons Fresh parsley chopped (for garnish)
  • Salt To taste
  • Freshly ground black pepper To taste

Preparation

  • Trim asparagus, mince garlic, zest and juice lemons, and pat shrimp dry.
  • Heat olive oil in a large skillet, add asparagus, and cook for 5-7 minutes until tender-crisp; remove and set aside.
  • Melt butter in the same skillet, add garlic and cook for 30 seconds, then add shrimp in a single layer and cook 2-3 minutes per side until pink.
  • Return asparagus to the skillet, stir in lemon juice and zest, and season with salt and pepper, tossing to combine.
  • Transfer to serving plates and garnish with fresh chopped parsley before serving.

Notes

Ensure shrimp are thoroughly patted dry for better searing. Avoid overcooking the shrimp, as they can become rubbery quickly.
