Classic Loaded Baked Potato with Steak Bites

Ingredients
  

For the Baked Potatoes

  • 4 large Russet potatoes
  • 2 tbsp olive oil
  • 1 tsp sea salt
  • ¼ tsp black pepper

For the Steak Bites

  • 1.5 lbs sirloin, ribeye, or top round steak
  • 1 tbsp olive oil
  • 1 tbsp unsalted butter
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • ½ tsp dried thyme
  • ½ tsp paprika
  • Salt and black pepper to taste

For the Toppings (get creative!)

  • 1 cup shredded cheddar cheese
  • ½ cup sour cream
  • 4 slices bacon cooked crisp and crumbled
  • 2 tbsp chopped fresh chives or green onions

Instructions
 

Prepare the Potatoes

  • Preheat your oven to 400°F (200°C), then scrub and pat the potatoes dry. Pierce each potato with a fork, rub with olive oil, and season with salt and pepper.
  • Place potatoes directly on the oven rack and bake for 60-75 minutes, or until tender when squeezed.

Cook the Bacon (if using)

  • While potatoes bake, cook bacon in a skillet over medium heat until crispy. Remove, drain, and crumble once cool.

Prepare the Steak Bites

  • Pat steak cubes dry, then toss them in a bowl with olive oil, garlic powder, onion powder, thyme, paprika, salt, and pepper until evenly coated.

Sear the Steak

  • Heat butter in a large skillet over medium-high heat until shimmering. Add steak bites in a single layer and sear for 2-3 minutes per side for desired doneness.
  • Remove steak from heat and set aside.

Assemble the Potatoes

  • Once potatoes are done, carefully remove them from the oven. Slice each potato lengthwise down the middle, making sure not to cut all the way through.
  • Fluff the insides of each potato with a fork.

Load 'em Up

  • Season the potato flesh with a pinch of salt and pepper. Top each potato generously with shredded cheese, allowing it to melt slightly.
  • Add a dollop of sour cream, a spoonful of crumbled bacon, and arrange the seared steak bites over the top.
  • Garnish with fresh chives or green onions and serve immediately.

Notes

For an extra kick, try adding a pinch of cayenne pepper to the steak seasoning. You can also experiment with different cheese blends like Monterey Jack or a spicy pepper jack. Ensure your steak bites are a similar size for even cooking. Adjust cooking time for steak based on your preferred doneness: longer for well-done, shorter for rare.
