  • 1.5 lbs thinly sliced beef (ribeye or sirloin)
  • 1 large onion, thinly sliced
  • 2 bell peppers (any color), thinly sliced
  • 2 cloves garlic, minced
  • 1 teaspoon Worcestershire sauce
  • 1/2 cup beef broth
  • Salt and freshly ground black pepper to taste

Creamy Cheese Topping

  • 8 ounces cream cheese, softened
  • 1/2 cup mayonnaise
  • 1 cup shredded provolone cheese
  • 1 cup shredded mozzarella cheese

Instructions
 

Preparation

  • Heat olive oil in a large skillet, then sauté onions and bell peppers for 8-10 minutes until softened. Add minced garlic and cook for one minute more until fragrant before removing vegetables and setting them aside.
  • Add sliced beef to the same skillet, browning it in batches if needed, and breaking up larger pieces. Once cooked, drain any excess grease from the pan.
  • Return the cooked vegetables to the skillet with the beef, stir in Worcestershire sauce and beef broth, and season with salt and pepper.

Assembly

  • Whisk together softened cream cheese and mayonnaise in a medium bowl until smooth.
  • Transfer the beef and vegetable mixture into a 9x13 inch baking dish, then evenly spread the cream cheese and mayonnaise mixture over the top.
  • Generously sprinkle both shredded provolone and mozzarella cheeses over the cream cheese layer.

Baking

  • Bake in a preheated oven at 375°F (190°C) for 20-25 minutes, or until the cheese is melted, bubbly, and slightly browned on top.
  • Let the casserole rest for 5-10 minutes before serving, and garnish with fresh parsley if desired.

Notes

For extra flavor, consider adding a dash of hot sauce or red pepper flakes to the beef and vegetable mixture. You can also customize the vegetables to your liking by adding mushrooms or other preferred low-carb options. Ensure the cream cheese is fully softened for a smoother mixture.
