Classic Low Fat Turkey Rice Bowl

  • 1 pound lean ground turkey (93% lean or higher)
  • 1 tablespoon olive oil
  • 1 small onion finely chopped
  • 2 cloves garlic minced
  • Salt to taste
  • Freshly ground black pepper to taste
  • 1 cup brown rice
  • 2 cups water or low-sodium chicken broth
  • 2 cups fresh spinach
  • 1 cup cherry tomatoes halved
  • 1/2 cucumber diced
  • 1/2 avocado sliced

For the Dressing

  • 2 tablespoons olive oil
  • 1 tablespoon lemon juice
  • 1 teaspoon Dijon mustard
  • 1/2 teaspoon honey
  • Salt and pepper to taste

Cooking

  • Rinse brown rice, then combine with water or broth in a saucepan.
  • Bring to a boil, then reduce heat, cover, and simmer for 45-50 minutes until liquid is absorbed and rice is tender.
  • While rice cooks, heat olive oil in a skillet and sauté chopped onion until translucent.
  • Add minced garlic and cook for one minute, then add ground turkey and brown completely, draining excess fat.
  • Season the cooked turkey with salt and pepper.
  • In a small bowl, whisk together olive oil, lemon juice, Dijon mustard, honey, salt, and pepper for the dressing.
  • Divide cooked brown rice among bowls and top with seasoned ground turkey.
  • Arrange spinach, cherry tomatoes, cucumber, and avocado around the turkey and rice.
  • Drizzle the dressing over the ingredients just before serving.

Notes

For extra flavor, you can add a pinch of red pepper flakes to the turkey while it cooks. Feel free to customize your veggies based on what's in season or your personal preference. This recipe is also great for meal prep; simply store the dressing separately and add it just before eating to prevent the salad from getting soggy.
