  • 2 tablespoons olive oil
  • 1 chopped large yellow onion
  • 2 peeled and diced carrots
  • 2 diced celery stalks
  • 3 minced garlic cloves
  • 6 cups chicken broth
  • 2 large boneless, skinless chicken breasts about 1.5 lbs, cooked and shredded or diced
  • 1 cup small pasta such as ditalini or orzo
  • 1/2 cup heavy cream
  • 1/4 cup finely grated Parmesan cheese plus extra for serving
  • 1/4 cup fresh parsley chopped
  • Salt to taste
  • Freshly ground black pepper to taste

Cooking Instructions

  • Heat olive oil in a large pot or Dutch oven and sauté chopped onion, carrots, and celery until softened (8-10 minutes).
  • Stir in minced garlic and cook for one minute until fragrant, being careful not to burn it.
  • Add chicken broth, bring to a simmer, then stir in cooked and shredded or diced chicken.
  • Add small pasta and cook for 7-10 minutes until al dente, stirring frequently to prevent sticking.
  • Reduce heat to low, stir in heavy cream and Parmesan cheese, and cook gently for 2-3 minutes until heated through and slightly thickened (do not boil).
  • Stir in fresh chopped parsley, season with salt and pepper to taste, and optionally add red pepper flakes. Serve hot with extra Parmesan cheese.

Notes

For best results, use a good quality chicken broth. Do not overheat the soup once the cream has been added to prevent curdling. Feel free to adjust seasonings to your personal preference.
