  • 1 package refrigerated tortellini (cheese, spinach, or meat-filled)
  • 1 tablespoon olive oil (or butter)
  • 1 shallot minced (or 1/4 small onion, finely diced)
  • 2 cloves garlic minced
  • 1/2 cup chicken or vegetable broth
  • 1/2 cup heavy cream
  • 1/4 cup grated Parmesan cheese plus more for serving
  • 1/4 cup sun-dried tomatoes packed in oil, drained and chopped
  • 1/4 teaspoon red pepper flakes (optional)
  • 1 cup fresh spinach
  • Salt and freshly ground black pepper to taste
  • Fresh basil or parsley chopped (for garnish)

Cooking Steps

  • Heat olive oil in a large skillet over medium heat, then add minced shallot and cook until softened and translucent.
  • Stir in minced garlic and red pepper flakes, cooking for one minute until fragrant, being careful not to burn.
  • Pour in broth, scraping any browned bits from the pan, and bring to a simmer.
  • Add tortellini and heavy cream to the simmering broth, stirring gently, and bring back to a gentle simmer.
  • Cook for 3-5 minutes, or as directed by the package, until the tortellini is tender and the sauce has slightly thickened.
  • Stir in sun-dried tomatoes, Parmesan cheese, and fresh spinach, cooking for 1-2 minutes until the spinach wilts.
  • Season with salt and pepper to taste; garnish with fresh basil or parsley and extra Parmesan before serving.

Notes

For extra richness, substitute butter for olive oil. You can adjust the amount of red pepper flakes to suit your spice preference.
