Classic Meatloaf Dinner with Roasted Garlic Potatoes

This classic meatloaf dinner combines a savory meatloaf glazed with a sweet and tangy sauce, served alongside perfectly roasted garlic potatoes. It's a comforting meal that's easy to prepare for a family dinner.

Ingredients
  

For the Meatloaf:

  • 1.5 lbs ground beef (80/20 or 85/15 works best for flavor and moisture)
  • large egg, beaten
  • 1/2 cup breadcrumbs (panko or regular)
  • 1/2 cup milk (any kind)
  • 1/4 cup finely chopped onion
  • 2 cloves garlic, minced
  • 1 tbsp Worcestershire sauce
  • 1 tsp dried Italian seasoning
  • 1/2 tsp salt
  • 1/4 tsp black pepper

For the Glaze:

  • 1/2 cup ketchup
  • 2 tbsp brown sugar
  • 1 tbsp apple cider vinegar
  • 1 tsp Dijon mustard

For the Potatoes:

  • 1.5 lbs small to medium potatoes (such as Yukon Gold or red new potatoes), cut into 1-inch pieces
  • 2 tbsp olive oil
  • 1 tsp dried rosemary or thyme (or a mix)
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • Fresh parsley, chopped, for garnish Optional

Instructions
 

Preheat & Prep

  • Preheat your oven to 375°F (190°C) and lightly grease a large baking sheet or a 9x13 inch baking dish.

Make the Meatloaf

  • In a large bowl, gently combine ground beef, egg, breadcrumbs, milk, onion, garlic, Worcestershire sauce, Italian seasoning, salt, and pepper until just mixed.
  • Form the mixture into an oval-shaped loaf (about 9x5 inches) and place it on one side of the prepared baking sheet.

Prepare the Potatoes

  • In a separate bowl, toss the potato pieces with olive oil, rosemary (or thyme), salt, and pepper until evenly coated.
  • Arrange the seasoned potatoes in a single layer around the meatloaf on the baking sheet.

Bake the Main Course

  • Bake for 30 minutes, then prepare the glaze by whisking together ketchup, brown sugar, apple cider vinegar, and Dijon mustard in a small bowl.

Glaze & Finish

  • After 30 minutes, remove the baking sheet, spread the glaze over the meatloaf, and return to the oven.
  • Continue baking for 25-35 minutes until the meatloaf reaches 160°F (71°C) and potatoes are tender and browned; let rest for 5-10 minutes.

Notes

Ensure not to overmix the meatloaf mixture to prevent it from becoming tough. Resting the meatloaf before slicing is crucial for retaining its juices and flavor.
