Classic Meatloaf with Creamy Mashed Potatoes

Ingredients
  

For the Meatloaf:

  • 1.5 lbs ground beef 80/20
  • 1 small onion finely chopped
  • 2 garlic minced
  • 1 large egg
  • 1/2 cup breadcrumbs panko or regular
  • 1/2 cup milk
  • 2 tbsp ketchup plus more for topping
  • 1 tbsp Worcestershire sauce
  • 1 tsp dried Italian seasoning
  • Salt and black pepper to taste

For the Mashed Potatoes:

  • 2 lbs russet or Yukon gold potatoes peeled and quartered
  • 1/2 cup warm milk or cream
  • 1/4 cup unsalted butter
  • Salt and black pepper to taste

Instructions
 

For the Meatloaf:

  • Preheat your oven to 350°F (175°C).
  • Sauté the chopped onion and minced garlic in a small pan over medium heat until softened, then let them cool slightly.
  • In a large bowl, gently combine the ground beef, cooled onion and garlic, egg, breadcrumbs, milk, ketchup, Worcestershire sauce, Italian seasoning, salt, and pepper; do not overmix.
  • Form the mixture into a loaf on a foil-lined baking sheet or in a loaf pan, then spread a thin layer of ketchup over the top.
  • Bake for 50-60 minutes until an instant-read thermometer reads 160°F (71°C), then let it rest for 10 minutes before slicing.

For the Mashed Potatoes:

  • Place peeled and quartered potatoes in a large pot, cover with cold salted water, bring to a boil, then simmer until fork-tender (15-20 minutes).
  • Drain the potatoes well and return them to the hot pot for a minute or two to evaporate excess moisture.
  • Add warm milk/cream, butter, salt, and pepper to the potatoes.
  • Mash until smooth and creamy using a potato masher, fork, or ricer, adjusting seasoning to taste.

Notes

For best results, do not overmix the meatloaf mixture to ensure a tender texture. When mashing potatoes, do not overwork them to prevent a gummy consistency.
