Classic Mississippi Mud Pie

Ingredients
  

For the Crust:

  • 1 ½ cups chocolate sandwich cookies (like Oreos), finely crushed (about 20 cookies)
  • ¼ cup unsalted butter melted

For the Chocolate Filling:

  • 1 package cream cheese (8-ounce), softened
  • 1 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1 container frozen whipped topping (12-ounce), (like Cool Whip), thawed, divided
  • 1 package instant chocolate pudding mix (3.9-ounce)
  • 2 cups cold milk (dairy or non-dairy alternatives work if appropriate for pudding mix)

For the Topping (Optional, but highly recommended!):

  • ½ cup heavy cream
  • 1 tablespoon powdered sugar
  • ½ teaspoon vanilla extract
  • Chocolate shavings or cocoa powder for garnish

Instructions
 

Prepare the Crust

  • Combine crushed chocolate cookies and melted butter in a medium bowl until well combined and crumbly.
  • Press the mixture firmly into the bottom of a 9-inch pie plate and chill in the refrigerator for 15-20 minutes.

Make the Cream Cheese Layer

  • In a large bowl, beat softened cream cheese with powdered sugar and vanilla extract until smooth.
  • Gently fold in half of the thawed whipped topping and spread evenly over the chilled cookie crust.

Whip Up the Chocolate Pudding Layer

  • Whisk instant chocolate pudding mix and cold milk for about 2 minutes until thickened.
  • Let it sit for a minute or two to thicken further before carefully spreading over the cream cheese layer.

Add the Final Whipped Topping

  • Spread the remaining thawed whipped topping over the chocolate pudding layer, ensuring the entire surface is covered.

Chill, Chill, Chill!

  • Cover the pie loosely with plastic wrap and refrigerate for at least 4 hours, or preferably overnight, to allow layers to firm up.

Optional Homemade Whipped Cream Topping

  • If desired, whip heavy cream, powdered sugar, and vanilla extract in a cold bowl until stiff peaks form.
  • Spread the homemade whipped cream over the chilled pie just before serving.

Garnish and Serve

  • Garnish the pie with chocolate shavings, cocoa powder, or chocolate curls before slicing and serving.

Notes

For best results, allow the pie to chill overnight. This will ensure a perfectly set pie that is easier to slice and has a more developed flavor. If using store-bought whipped topping, ensure it is completely thawed before folding into the cream cheese mixture and spreading over the pudding.
