Ingredients
  

Crust

  • 1.5 cups graham cracker crumbs (about 10-12 full sheets, finely crushed)
  • 0.25 cup granulated sugar
  • 6 tablespoons unsalted butter, melted

Filling

  • 2 packages full-fat cream cheese, softened (8-ounce)
  • 1 cup powdered sugar, sifted
  • 1 teaspoon vanilla extract
  • 0.25 cup heavy cream, cold
  • 1 envelope unflavored gelatin (7g) unflavored gelatin dissolved in ΒΌ cup hot water (optional)

Instructions
 

Prepare the Crust

  • Combine graham cracker crumbs, granulated sugar, and melted butter in a bowl, then press the mixture evenly into a 9-inch springform pan.
  • Place the crust in the freezer for at least 15 minutes to chill while you prepare the filling.

Make the Classic No-Bake Cheesecake Filling

  • Beat softened cream cheese until smooth, then gradually add sifted powdered sugar and vanilla extract, mixing until fully incorporated.
  • In a separate bowl, whip cold heavy cream until soft peaks form, then gently fold it into the cream cheese mixture until just combined.
  • If using, whisk the dissolved gelatin into the cream cheese mixture before folding in the whipped cream.

Assemble and Chill

  • Pour the cheesecake filling over the crust in the springform pan, then cover it loosely with plastic wrap.
  • Refrigerate for a minimum of 6 hours, or preferably overnight, to allow it to set and become firm.

Garnish and Serve

  • Once firm, carefully remove the cheesecake from the springform pan and garnish as desired.
  • For clean slices, dip a sharp knife in hot water and wipe it clean between each cut.

Notes

For best results, ensure your cream cheese is fully softened to avoid lumps in the filling. Chilling the cheesecake overnight provides an optimal firm texture. Experiment with different toppings like fresh berries, chocolate shavings, or fruit sauces to customize your dessert.
