Classic No-Fuss Meatloaf Dinner

Ingredients
  

Meatloaf

  • 1 1/2 lbs lean ground beef or a mix of beef, pork, and/or veal for richer flavor
  • 1 small onion finely diced
  • 1 large egg lightly beaten
  • 1/2 cup breadcrumbs plain or Panko work well
  • 1/2 cup milk whole or low-fat
  • 2 tablespoons ketchup plus more for the glaze
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon dried Italian seasoning
  • 1/2 teaspoon garlic powder
  • Salt to taste
  • freshly ground black pepper to taste

For the Glaze

  • 1/2 cup ketchup
  • 2 tablespoons brown sugar
  • 1 tablespoon apple cider vinegar
  • 1/2 teaspoon Dijon mustard

Instructions
 

Preparation

  • Preheat your oven to 375°F (190°C) and lightly grease a baking dish or line a baking sheet with parchment paper.
  • In a large bowl, whisk together the beaten egg, milk, 2 tablespoons ketchup, and Worcestershire sauce.
  • Stir in the finely diced onion, breadcrumbs, Italian seasoning, garlic powder, salt, and pepper into the wet mixture until just combined.

Making the Meatloaf

  • Add the ground beef to the bowl and gently mix everything together with your hands until evenly distributed, being careful not to overmix.
  • Transfer the meat mixture to your prepared baking dish or sheet and form it into a loaf shape, about 9x5 inches.

Glaze and Bake

  • In a small bowl, whisk together the ½ cup ketchup, brown sugar, apple cider vinegar, and Dijon mustard until smooth.
  • Spread about half of the glaze evenly over the top of the meatloaf and bake for 45 minutes.
  • Remove the meatloaf from the oven, spread the remaining glaze over it, and return to the oven for another 15-20 minutes, or until the internal temperature reaches 160°F (71°C).

Finishing

  • Once cooked, remove the meatloaf from the oven and let it rest for 10-15 minutes before slicing to ensure a moist and flavorful result.

Notes

For extra flavor, you can sauté the diced onion before adding it to the meat mixture. Serve with mashed potatoes and your favorite green vegetable for a complete meal.
