Classic Oatmeal Apple Breakfast Bake

Main Ingredients

  • 2 cups rolled oats old-fashioned
  • 2 medium-sized apples peeled, cored, and diced (about 3 cups)
  • 2 tablespoons unsalted butter
  • 1/2 cup brown sugar packed
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 2 large eggs lightly beaten
  • 2 cups milk dairy or non-dairy like almond or oat milk
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon baking powder
  • salt Pinch of

Optional Topping

  • 1/4 cup chopped pecans or walnuts
  • 1 tablespoon brown sugar
  • 1 tablespoon rolled oats
  • 1 tablespoon melted butter

Instructions
 

Preheat & Prep

  • Preheat your oven to 375°F (190°C) and lightly grease a 9x13-inch baking dish.

Sauté the Apples

  • Melt the butter in a large skillet over medium heat, then add the diced apples, 1 tablespoon brown sugar, 1/2 teaspoon cinnamon, and nutmeg.

Combine Wet Ingredients

  • Whisk together the beaten eggs, milk, vanilla extract, and the remaining 7 tablespoons of brown sugar in a large bowl.

Mix Dry Ingredients

  • In another large bowl, combine the rolled oats, baking powder, the remaining 1/2 teaspoon of cinnamon, and a pinch of salt.

Bring it Together

  • Add the wet ingredients to the dry ingredients, stir until just combined, and gently fold in the sautéed apples.

Pour & Top

  • Pour the mixture evenly into your prepared baking dish.

Optional Crumble Topping

  • For the topping, combine chopped nuts, 1 tablespoon brown sugar, 1 tablespoon oats, and 1 tablespoon melted butter in a small bowl, then sprinkle over the oat bake.

Bake

  • Bake for 35-45 minutes, or until set, apples are tender, and the top is golden brown.

Cool & Serve

  • Let the breakfast bake cool for 5-10 minutes before serving to allow it to set.

Notes

For extra flavor, you can add a pinch of cardamom with the cinnamon and nutmeg. This bake can be made ahead of time and reheated in the oven or microwave. It's also great served with a dollop of Greek yogurt or a drizzle of maple syrup.
