  • 1-2 tbsp oil or butter for cooking

  • Slice the yellow onions as thinly as possible, ideally using a mandoline, to ensure optimal caramelization and integration with the patty.
  • Divide the ground beef into four loose, roughly 1/4-pound balls, handling the meat minimally to maintain tenderness.
  • Heat a cast-iron skillet or griddle over medium-high heat until screaming hot, then add a tablespoon of oil or butter.
  • Place a beef ball on the hot griddle and immediately pile a generous amount of thinly sliced onions directly on top.
  • Using a sturdy metal spatula and parchment paper, firmly press down on the beef and onions to form a very thin patty, holding for about 10 seconds to maximize contact.
  • Cook the first side for 1.5-2 minutes until crispy edges form and the onions are slightly charred and softened.
  • Carefully scrape and flip the patty, then immediately place a slice of cheese on the cooked side.
  • Continue cooking for another 1-2 minutes until the cheese is melted and the burger reaches your desired doneness.
  • Optionally, toast the burger buns on the griddle or in a separate pan until golden and warm.
  • Remove the cooked burger, place it on a toasted bun, and add desired condiments and toppings; serve immediately with sides like French fries.

Notes
