  • Olive oil For browning the chicken.

  • 28 ounce can Crushed tomatoes good quality makes all the difference.
  • 1 teaspoon Dried oregano for classic Italian flavor.
  • 1 teaspoon Dried basil complementing the oregano beautifully.
  • 0.5 teaspoon Sugar A pinch, to balance the acidity of the tomatoes.
  • Salt and freshly ground black pepper To taste, for seasoning every layer.
  • 8 ounces Fresh mozzarella cheese sliced or shredded, for that ultimate melt.
  • 0.5 cup Parmesan cheese grated, for a salty, nutty kick.
  • Fresh parsley Chopped, for garnish (optional, but highly recommended for freshness).

Instructions
 

Preparation

  • Pat the chicken cutlets dry with paper towels and season generously with salt and pepper.
  • Sear the chicken in a large oven-safe skillet with olive oil over medium-high heat for 3-4 minutes per side until golden brown, then remove and set aside.
  • Reduce heat to medium, sauté minced garlic in the same skillet for 1 minute until fragrant.
  • Pour in crushed tomatoes, stir in dried oregano, dried basil, and sugar, then season with salt and pepper and bring the sauce to a simmer.
  • Return the seared chicken to the skillet, nestling into the sauce, and top each breast with fresh mozzarella and grated Parmesan cheese.
  • Transfer the skillet to a preheated 400°F (200°C) oven and bake for 15-20 minutes until the chicken is cooked through and the cheese is melted and bubbly.
  • Garnish with fresh parsley if desired, and serve hot.

Notes

For best results, use good quality crushed tomatoes as they make a significant difference in the sauce flavor. Ensure chicken breasts are uniformly thin for even cooking by slicing or pounding them into cutlets.
