  • 1 tablespoon olive oil
  • 1 pound lean ground beef
  • 1 medium onion chopped
  • 2 cloves garlic minced
  • 1 cup uncooked long-grain white rice
  • 2 cups beef broth
  • 1 can (15-ounce) diced tomatoes undrained
  • 1 teaspoon dried oregano
  • 0.5 teaspoon cumin
  • Salt and freshly ground black pepper to taste
  • 0.5 cup frozen peas or corn optional
  • Fresh parsley or cilantro chopped (for garnish, optional)

Cooking Steps

  • Heat olive oil in a large skillet and brown the ground beef, breaking it apart until cooked; drain excess grease.
  • Add chopped onion to the skillet and cook for 3-5 minutes until softened, then stir in minced garlic and cook for one minute more.
  • Stir in rice, beef broth, diced tomatoes, oregano, cumin, salt, and pepper; bring the mixture to a boil.
  • Reduce heat to low, cover, and simmer for 15-20 minutes until rice is tender and liquid is absorbed.
  • If desired, stir in frozen peas or corn during the last 5 minutes of cooking.
  • Remove from heat, let stand covered for 5 minutes, then fluff with a fork; garnish and serve.

Notes

For extra flavor, you can add a pinch of red pepper flakes with the spices. This dish reheats well and is great for meal prep.
