  • 1 pound lean ground beef
  • 1 small onion chopped
  • 2 cloves garlic minced
  • 1 cup beef broth
  • 1 cup milk any kind
  • 1 can condensed cheddar cheese soup 10.75 ounce
  • 1 packet ranch seasoning mix 1 ounce
  • 8 ounces elbow macaroni or other small pasta
  • 1 cup shredded sharp cheddar cheese

  • Black pepper to taste
  • Fresh parsley chopped, for garnish, optional

  • Heat olive oil in a large pot over medium-high heat, then add ground beef and chopped onion.
  • Cook, breaking up the beef, until browned and the onion is softened (5-7 minutes), then drain excess grease.
  • Stir in minced garlic and cook for one minute until fragrant.
  • Pour in beef broth, milk, condensed cheddar cheese soup, and ranch seasoning mix; stir well to combine.
  • Add uncooked macaroni, bring to a boil, then reduce heat to medium-low, cover, and simmer for 10-12 minutes until pasta is tender and liquid is absorbed, stirring occasionally.
  • Remove from heat and stir in shredded cheddar cheese until melted and creamy.
  • Adjust seasoning with salt and pepper as needed, then garnish with fresh parsley if desired and serve immediately.

Notes

Stirring occasionally during the simmering step is crucial to prevent the macaroni from sticking to the bottom of the pot and ensuring even cooking.
