  • 1 tablespoon Olive Oil
  • 4-5 Garlic, minced cloves
  • 4 cups Chicken or Vegetable Broth lower sodium recommended
  • 1 cup Milk whole milk or half-and-half
  • 20 ounces Refrigerator/Fresh Tortellini cheese or meat-filled
  • 1/2 cup Parmesan Cheese, freshly grated
  • 2 ounces Cream Cheese, softened
  • 2 tablespoons Fresh Parsley, chopped
  • Salt and Black Pepper to taste

Cooking Instructions

  • Heat olive oil in a large pot over medium heat and sauté minced garlic for about 1 minute until fragrant, being careful not to burn it.
  • Pour in chicken broth and milk, bring to a gentle simmer, then add fresh tortellini and stir to submerge.
  • Reduce heat to medium-low, cover, and simmer for 8-10 minutes until tortellini is tender and most liquid is absorbed, stirring occasionally.
  • Remove from heat, stir in softened cream cheese until fully melted, then add grated Parmesan and stir until smooth.
  • Season with salt and pepper to taste, stir in fresh parsley, and serve immediately.

Notes

For extra flavor, you can sauté a finely chopped shallot with the garlic. If the sauce is too thick, add a splash more milk or broth. This recipe is easily customizable with various tortellini fillings or by adding cooked chicken or vegetables.
