Classic Pan-Fried Yaki Udon with Shrimp

Ingredients
  

For the Shrimp

  • 1 lb large shrimp, peeled and deveined fresh or frozen, thawed
  • 1 tbsp soy sauce
  • 1 tsp cornstarch

For the Noodles & Vegetables

  • 2 packages fresh udon noodles (7 oz) refrigerated, not dried
  • 2 tbsp vegetable oil or olive oil
  • 1 cup sliced shiitake mushrooms or cremini
  • 1 red bell pepper, thinly sliced
  • 1 cup snap peas or snow peas
  • 1/2 white onion, thinly sliced
  • 2 cloves garlic, minced
  • 1 tbsp fresh ginger, grated

For the Sauce

  • 1/4 cup soy sauce low sodium preferred
  • 2 tbsp mirin
  • 1 tbsp oyster sauce optional
  • 1 tbsp brown sugar or honey
  • 1 tsp sesame oil
  • 1/2 tsp sriracha or chili garlic sauce adjust to taste
  • 1/4 cup water or chicken broth

For Garnish (Optional)

  • Toasted sesame seeds
  • Chopped green onions

Instructions
 

Cooking

  • Toss shrimp with soy sauce and cornstarch in a bowl; set aside to marinate.
  • Gently separate fresh udon noodles, or blanch briefly in boiling water to loosen, then drain well.
  • Whisk all sauce ingredients together in a small bowl and set aside.
  • Chop all vegetables: slice mushrooms, bell pepper, and onion; mince garlic and grate ginger.
  • Cook shrimp in 1 tablespoon of oil over medium-high heat for 1-2 minutes per side until opaque, then remove and set aside.
  • Add remaining oil to the skillet and sauté onion, bell pepper, mushrooms, garlic, and ginger for 3-5 minutes until tender-crisp.
  • Return cooked shrimp and prepared udon noodles to the skillet, then pour the whisked sauce over all ingredients.
  • Toss continuously for 2-3 minutes until the sauce coats everything and thickens slightly.
  • Serve immediately, garnished with sesame seeds and green onions if desired.

Notes

For extra spice, increase the amount of sriracha or chili garlic sauce. You can easily adapt this recipe with other vegetables like carrots, cabbage, or broccoli florets. Ensure your skillet or wok is hot enough for a good stir-fry, and avoid overcrowding the pan to get a good sear on the shrimp and vegetables.
