  • 1 lb lean ground turkey 93/7 or 90/10
  • 1 medium onion chopped
  • 2 cloves garlic minced
  • 1 bell pepper any color, chopped
  • 1 small zucchini or yellow squash chopped
  • 1 tsp cumin
  • 1 tsp chili powder
  • 1/2 tsp paprika
  • 1/2 tsp salt or to taste
  • 1/4 tsp black pepper or to taste
  • 1 can diced tomatoes 14.5 oz, undrained
  • 1/2 cup chicken broth or water

  • Heat a large skillet over medium-high heat with olive oil. Add ground turkey and cook until browned, then drain excess grease.
  • Add chopped onion and cook until soft; stir in minced garlic and cook for one more minute.
  • Toss in bell peppers and zucchini, then stir in cumin, chili powder, paprika, salt, and pepper. Cook for 3-5 minutes until vegetables soften.
  • Pour in diced tomatoes and broth, bring to a simmer, then reduce heat and cook for 5-7 minutes, allowing the sauce to thicken.
  • Taste the mixture and adjust seasoning as necessary.
  • Serve over rice or quinoa and garnish with cilantro, avocado, lime, or hot sauce.

Notes

This recipe is highly versatile; feel free to add other vegetables like corn or black beans for extra flavor and nutrients. For a spicier kick, increase the amount of chili powder or add a pinch of cayenne pepper. Leftovers can be stored in an airtight container in the refrigerator for up to 3 days and reheated gently on the stovetop or in the microwave.
