  • 1 tbsp olive oil
  • 1 lb ground turkey 93% lean
  • large onion chopped
  • 2 cloves garlic minced
  • 1 packet taco seasoning 1 oz
  • 1/2 cup water
  • 1 can black beans 15 oz, rinsed and drained
  • 1 can diced tomatoes 15 oz, undrained
  • 1/2 cup frozen corn

Optional Toppings

  • shredded lettuce
  • diced tomatoes
  • shredded cheese
  • sour cream
  • cilantro
  • tortillas or lettuce cups

  • Heat olive oil in a large skillet over medium-high heat.
  • Add ground turkey to the skillet and cook until browned, breaking it up with a spoon. Drain any excess fat.
  • Stir in the chopped onion and minced garlic and cook until softened and fragrant.
  • Add taco seasoning and water, bringing the mixture to a simmer.
  • Stir in the rinsed black beans, undrained diced tomatoes, and frozen corn.
  • Reduce heat and simmer for 5-7 minutes to allow flavors to meld and sauce to thicken.
  • Serve hot with your favorite taco toppings.

Notes

For a spicier kick, add a pinch of red pepper flakes with the taco seasoning. This dish can be made ahead of time and reheated. Store leftovers in an airtight container in the refrigerator for up to 3-4 days.
