Classic Salisbury Steak and Gravy

Ingredients
  

For the Salisbury Steaks:

  • 1.5 lbs ground beef (80/20 lean)
  • 1/2 cup breadcrumbs (panko or regular)
  • 1/4 cup milk
  • 1/4 cup finely chopped onion
  • 1 large egg
  • 1 tbsp Worcestershire sauce
  • 1 tsp garlic powder
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 2 tbsp olive oil (for searing)

For the Gravy:

  • 2 tbsp butter
  • 2 tbsp all-purpose flour
  • 2 cups beef broth
  • 1 tbsp Worcestershire sauce
  • 1 tsp Dijon mustard (optional)
  • 1/4 cup sliced mushrooms Optional:

Prepare the Salisbury Steaks

  • In a large bowl, combine ground beef, breadcrumbs, milk, onion, egg, Worcestershire sauce, garlic powder, salt, and pepper. Mix gently until just combined. Divide the mixture into 5-6 oval-shaped patties, about 1/2-inch thick.

Cook the Steaks

  • Heat olive oil in a large skillet over medium-high heat. Sear patties for 4-5 minutes per side until browned and cooked through. Remove patties and set aside; do not clean the skillet.

Make the Gravy

  • Reduce heat to medium, add butter to the skillet, and whisk in flour for 1-2 minutes until a light golden roux forms. If using, add mushrooms and cook until softened for 3-4 minutes.

Finish the Gravy and Serve

  • Gradually whisk in beef broth, Worcestershire sauce, and Dijon mustard. Bring to a simmer, stirring occasionally, until thickened to your desired consistency (5-7 minutes). Return steaks to the skillet to simmer in gravy for 5 minutes, then taste and adjust seasoning before serving hot.

Notes

For extra flavor, use a good quality beef broth for the gravy. You can also add a splash of red wine to the gravy for a deeper taste.
