Classic Shrimp and Vegetable Stir Fry

Ingredients
  

For the Stir-Fry

  • 1 lb large shrimp 21-25 count, peeled and deveined
  • 2 tbsp neutral oil with a high smoke point (e.g., canola, grapeseed, or avocado oil)
  • 3 cloves Garlic minced
  • 1 tbsp fresh ginger grated or finely minced
  • 2 cups Broccoli florets cut into bite-sized pieces
  • 2 medium Carrots thinly sliced into rounds or julienned
  • 1 large Bell Peppers any color, thinly sliced
  • 1 cup Snap Peas or Snow Peas
  • 3 Green Onions sliced, white and green parts separated

For the Sauce

  • 1/4 cup Soy Sauce low-sodium preferred
  • 2 tbsp Oyster Sauce or hoisin sauce for a vegetarian option
  • 1 tbsp Rice Vinegar
  • 1 tsp Sesame Oil
  • 1 tsp Brown Sugar or Honey adjust to taste
  • 1 tbsp Cornstarch
  • 2 tbsp Water or Chicken Broth

Instructions
 

Preparation

  • Whisk together soy sauce, oyster sauce, rice vinegar, sesame oil, brown sugar, cornstarch, and water until smooth to create the sauce.
  • Pat the shrimp dry with paper towels.

Cooking

  • Heat a wok or skillet over high heat; add 1 tablespoon of oil and swirl to coat the pan.
  • Cook the shrimp for 1-2 minutes per side until pink and opaque, then remove and set aside.
  • Add the remaining oil to the pan, then stir-fry minced garlic, ginger, and the white parts of green onions for 30 seconds until fragrant.
  • Add broccoli and carrots and stir-fry for 2-3 minutes until crisp-tender.
  • Add bell peppers and snap peas and continue to stir-fry for 1-2 minutes until bright and slightly crunchy.
  • Return the shrimp to the pan, whisk the sauce again, and pour it over the ingredients, stirring constantly for 1-2 minutes until it thickens and coats everything.
  • Remove from heat, stir in the green parts of the green onions, and serve immediately.

Notes

For an extra kick, add a pinch of red pepper flakes with the aromatics. Serve this stir-fry over steamed rice or noodles for a complete meal. Adjust the amount of brown sugar or honey in the sauce to your preferred sweetness level. Do not overcrowd the pan when cooking the shrimp or vegetables, as this can steam them instead of stir-frying, resulting in a less crisp texture.
