  • 12-14 oz Silken Tofu soft or firm
  • 8 oz Dark Chocolate 70% cocoa or higher, chopped
  • 1/4 - 1/2 cup Sweetener maple syrup, agave nectar, or preferred liquid sweetener
  • 1 teaspoon Vanilla Extract
  • 1/8 teaspoon Pinch of Salt

  • Drain the silken tofu; gently press out excess water without breaking it.
  • Melt the chopped dark chocolate in a microwave or double boiler until smooth.
  • Transfer tofu to a blender, add melted chocolate, sweetener, vanilla, and salt.
  • Blend until completely smooth and creamy, scraping down sides as needed.
  • Pour into dishes, cover, and refrigerate for 2-4 hours, or preferably overnight, to set and chill.
  • Serve chilled, with optional garnishes.

Notes

For best results, ensure the tofu is well-drained. Adjust sweetener to your preference. This mousse is even better the next day after a full night in the refrigerator.
