  • 2 cups Uncooked White or Brown Rice
  • 1 tbsp Olive Oil
  • Onion diced
  • 2 cloves Garlic minced
  • bell pepper (any color) diced
  • 1 tsp Cumin
  • 1 tsp Chili Powder
  • 0.5 tsp Paprika
  • Salt and Black Pepper to taste
  • 0.5 cup Chicken or Vegetable Broth optional, for moisture

  • Fresh cilantro or parsley
  • Lime wedges
  • Avocado
  • Black beans, corn, salsa, hot sauce, shredded cheese
  • Broccoli, carrots, snap peas, soy sauce, sesame oil
  • Greek yogurt or sour cream

Instructions
 

Rice

  • Cook rice according to package directions; for white rice, combine 2 cups rice with 4 cups water or broth, bring to a boil, then simmer for 15-20 minutes, then fluff.
  • Brown rice requires longer cooking (40-50 minutes) and potentially more liquid; once cooked, let stand covered for 5 minutes before fluffing.

Turkey and Aromatics

  • Heat olive oil in a large skillet over medium heat, then sauté diced onion and bell pepper for 5-7 minutes until softened.
  • Stir in minced garlic, cumin, chili powder, and paprika; cook for 1 minute until fragrant, being careful not to burn the garlic.
  • Add ground turkey, break it apart, and cook until no longer pink (8-10 minutes); drain excess fat if needed.
  • Season turkey with salt and pepper; if using, add broth and simmer until liquid evaporates, allowing flavors to meld.

Serving

  • You can mix the turkey and rice or keep them separate for plating flexibility.
