  • 1 lb lean ground turkey (93% or 95% lean)
  • 1 yellow onion chopped
  • 2 cloves garlic minced
  • 1 red bell pepper chopped
  • 1 zucchini chopped
  • 1 can (14.5 oz) diced tomatoes undrained
  • 0.5 cup chicken broth (low sodium)
  • 1 tsp dried Italian seasoning
  • 0.5 tsp salt
  • 0.25 tsp black pepper
  • fresh parsley chopped (for garnish)

Cooking Steps

  • Heat olive oil in a large skillet over medium-high heat. Add ground turkey and cook for 5-7 minutes until browned, then drain excess fat.
  • Move the turkey to one side and add chopped onion to the empty side, cooking for 3-5 minutes until softened. Stir in minced garlic and cook for another minute.
  • Combine the turkey and aromatics, then add chopped red bell pepper and zucchini. Cook for 5-7 minutes, stirring until vegetables start to soften.
  • Stir in Italian seasoning, salt, and black pepper, cooking for 1 minute until fragrant.
  • Pour in undrained diced tomatoes and chicken broth. Bring the mixture to a gentle simmer.
  • Continue to simmer for 5-10 minutes, or until vegetables are tender-crisp and the sauce has slightly thickened.
  • Taste and adjust seasonings as needed.
  • Garnish with fresh chopped parsley before serving.

Notes

For a spicier kick, add a pinch of red pepper flakes with the Italian seasoning. Serve this skillet over rice, pasta, or with a side of crusty bread.
