Ingredients
  

Meatloaf

  • 1.5 lbs ground beef 80/20 or 85/15
  • 1 large egg lightly beaten
  • 0.5 cup plain breadcrumbs or panko
  • 0.5 cup milk any kind
  • 0.5 cup finely chopped onion
  • 0.25 cup finely chopped green bell pepper optional
  • 2 garlic minced
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon dried parsley
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper

Glaze (optional but recommended)

  • 0.5 cup ketchup
  • 2 tablespoons brown sugar
  • 1 tablespoon apple cider vinegar

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C) and lightly grease a 9x5 inch loaf pan or baking dish.
  • In a large bowl, whisk together the egg, milk, Worcestershire sauce, salt, and pepper.
  • Stir in the breadcrumbs, onion, garlic, and parsley, along with the optional green bell pepper. Let sit for 5 minutes.
  • Add the ground beef to the bowl and gently mix until just combined, avoiding overmixing.

Cooking

  • Transfer the meat mixture to the prepared loaf pan or shape into a loaf in a baking dish.
  • For the glaze, whisk together ketchup, brown sugar, and apple cider vinegar in a small bowl.
  • Bake for 44-45 minutes, then spread the glaze over the meatloaf and bake for another 15-20 minutes, or until the internal temperature reaches 160°F (71°C).

Resting

  • Remove from the oven and let the meatloaf rest for 10-15 minutes before slicing to allow juices to redistribute.

Notes

For best results, use a meat thermometer to ensure the meatloaf is cooked through but not overcooked. The resting period is crucial for a moist meatloaf.
