  • 2 Large Eggs
  • 1 tbsp Olive Oil or Butter
  • 2 tbsp Marinara Sauce your favorite
  • 1/4 cup Shredded Mozzarella Cheese
  • 6 slices Cooked Pepperoni mini or cut into quarters
  • 1/8 cup Diced Bell Peppers any color
  • Salt and Black Pepper to taste
  • Fresh basil for garnish, optional

  • Heat a non-stick skillet over medium heat and add olive oil or butter.
  • Sauté diced bell peppers for 2-3 minutes until slightly softened.
  • Crack eggs into the skillet and cook for 2-3 minutes until whites are set and yolks are runny; alternatively, whisk and scramble eggs with peppers.
  • Dollop marinara sauce over the cooked eggs.
  • Sprinkle with mozzarella cheese and arrange pepperoni slices on top.
  • Cover and cook for 1-2 minutes until cheese is melted and bubbly, reducing heat to low.
  • Season with salt and black pepper to taste.
  • Serve immediately, with fresh basil if desired.

Notes

For an extra kick, add a pinch of red pepper flakes with the marinara sauce.
