  • 3 lbs boneless, skinless chicken breasts or thighs
  • 1 packet taco seasoning (1 oz)
  • 1/2 cup chicken broth
  • 1 cup mild salsa
  • 1 medium onion chopped
  • 2 cloves garlic minced
  • 1 tbsp lime juice
  • 1/4 cup fresh cilantro chopped (for garnish, optional)

Taco Bar Fixings

  • 12-16 corn or flour tortillas
  • 1 cup shredded lettuce
  • 1 cup diced tomatoes
  • 1 cup shredded Cheddar cheese
  • 1/2 cup sour cream
  • 1/2 cup salsa verde
  • 1/4 cup sliced jalapeƱos (fresh or pickled)
  • 1 avocado, sliced or 1/2 cup guacamole
  • Hot sauce to taste
  • 1 (15 oz) can black beans rinsed and drained (optional)
  • 1 cup corn kernels (optional)

Instructions
 

Cooking Steps

  • Prepare the onion and garlic by chopping and mincing them, then pat the chicken dry with paper towels.
  • Place the chicken in the slow cooker and generously sprinkle the taco seasoning over it.
  • Add the chopped onion, minced garlic, chicken broth, and salsa to the slow cooker with the chicken.
  • Cover the slow cooker and cook on low for 6-8 hours or on high for 3-4 hours until the chicken is tender.
  • Once cooked, remove the chicken from the slow cooker and shred it using two forks.
  • Return the shredded chicken to the slow cooker, stirring it well to coat it with the tasty juices.
  • Stir in the lime juice and chopped cilantro, if you are using it, for added flavor.
  • Warm the tortillas using a microwave, oven, or griddle just before you are ready to serve.
  • Set out the warm shredded chicken and all your desired taco bar fixings in separate bowls for guests to assemble their own tacos.

Notes

Store any leftover shredded chicken in an airtight container in the refrigerator for up to 3-4 days. Offer a variety of toppings to customize each taco to individual preferences.
