Main Ingredients

  • 1 lb 80/20 ground beef (about 450g), divided into four 4-ounce balls
  • 4 burger buns (brioche, potato, or classic white)
  • 4 American, cheddar, or Swiss cheese slices
  • Salt and freshly ground black pepper to taste
  • 1 tablespoon high-smoke point cooking oil (canola, avocado, or grapeseed)

Instructions
 

Burger Preparation

  • Divide the ground beef into four 4-ounce portions and gently form them into loose balls, avoiding overworking the meat.

Cooking the Patties

  • Preheat a cast-iron skillet or heavy-bottomed pan over high heat for at least 5 minutes until smoking hot, then add a thin layer of cooking oil.
  • Place a beef ball onto the hot pan, then immediately press down firmly with a sturdy metal spatula to smash it as thin as possible, aiming for irregular edges.
  • Generously season the smashed patty with salt and black pepper.
  • Cook undisturbed for 1.5 to 2 minutes until the edges are dark brown and crispy with a deep crust.
  • Scrape the patty off the pan, flip it, and immediately place a slice of cheese on top.
  • Cook for another 1 minute until the cheese is melted and bubbling, and the patty is cooked through.

Toasting Buns & Serving

  • While burgers cook, lightly butter or oil the buns and toast them on the same hot pan for 30 seconds to 1 minute until golden.
  • Transfer the cheesy patty to a toasted bun and add your desired toppings, then serve immediately.

Notes

For an extra crispy crust, ensure your pan is extremely hot before adding the beef. Don't overcrowd the pan; cook burgers in batches if necessary. Experiment with different cheese types and toppings to customize your smash burger!
