Equipment

  • Large bowl
  • Pastry blender or fingertips
  • Clean kitchen towel or plastic wrap
  • Sharp knife or pizza cutter
  • Large, heavy-bottomed pot or Dutch oven
  • Tongs or slotted spoon

Ingredients

Sopaipilla Dough

  • 2 cups All-Purpose Flour
  • 2 teaspoons Baking Powder
  • 1/2 teaspoon Salt
  • 2 tablespoons Shortening or Lard plus more for greasing bowl
  • 3/4 cup Warm Water plus more if needed

For Frying and Serving

  • 4 cups Vegetable Oil for deep frying
  • 1/2 cup Honey for serving
  • 2 tablespoons Cinnamon Sugar for serving

Instructions

Prepare the Dough

  • Combine flour, baking powder, and salt in a large bowl, then cut in shortening or lard until crumbly.
  • Add warm water gradually to form a soft dough, then knead for 5-7 minutes until smooth and elastic.

Rest and Shape

  • Cover the dough and let it rest at room temperature for at least 30 minutes.
  • Roll out the dough to 1/8 to 1/4-inch thickness on a floured surface, then cut into 2-3 inch pieces.

Fry the Sopaipillas

  • Heat 2-3 inches of vegetable oil in a pot to 350-375°F (175-190°C).
  • Fry 2-3 dough pieces for 1-2 minutes per side until golden and puffed, then remove and drain on parchment paper.

Serve

  • Serve the warm sopaipillas with honey or cinnamon sugar as desired.

Notes

Ensure your oil is at the correct temperature for best results; too cool and the sopaipillas will be greasy, too hot and they will brown too quickly without puffing properly.
