  • 1-2 large, perfectly ripe, in-season tomatoes
  • 2 slices good quality, soft white sandwich bread
  • 2-3 tablespoons full-fat, creamy mayonnaise

Seasoning

  • Salt (preferably flaky sea salt or kosher salt)
  • Freshly ground black pepper

Preparation

  • Wash and slice tomatoes into ¼ to ½-inch thick rounds; consider placing them on paper towel to absorb excess moisture.
  • Arrange slices on a plate, generously season both sides with salt and pepper, and let sit for 5 minutes.
  • While tomatoes rest, take out your two slices of soft white bread.

Assembly

  • Spread a generous, even layer of mayonnaise on one side of each bread slice, extending to the edges.
  • Layer the seasoned tomato slices on one mayonnaise-covered bread slice, overlapping slightly to cover the surface.
  • Place the second mayonnaise-covered bread slice on top, mayo-side down, gently press, and slice diagonally to serve immediately.

Notes

For the best flavor, use ripe, in-season tomatoes. Duke's mayonnaise is highly recommended for an authentic Southern taste.
