Classic Spiced Red Lentil Crepes Masoor Dal Delight

  • 1 cup red lentils (masoor dal) split
  • 1 green chili deseeded and finely chopped (adjust to your spice preference)
  • 1 inch piece ginger peeled and grated
  • 2 cloves garlic minced
  • 1 teaspoon cumin seeds
  • 1/2 teaspoon turmeric powder
  • 1/4 teaspoon asafoetida (hing) optional, but adds a lovely savory depth
  • 1/4 cup fresh cilantro finely chopped
  • Salt to taste
  • Water for soaking and blending
  • Oil or ghee for cooking

Instructions
 

Preparation

  • Rinse the red lentils thoroughly and soak them in fresh water for 2-4 hours or preferably overnight until they soften and swell.
  • Drain the soaked lentils and transfer them to a blender along with the green chili, grated ginger, minced garlic, cumin seeds, turmeric powder, asafoetida (if using), and salt.
  • Add about 1/2 cup of water to the blender and blend until you achieve a smooth, pourable batter, similar to pancake batter, adding more water gradually if needed.
  • Pour the batter into a bowl, stir in the finely chopped fresh cilantro, and adjust salt to taste.

Cooking

  • Heat a non-stick pan or cast-iron griddle over medium heat and lightly brush it with oil or ghee.
  • Pour about 1/4 cup of batter onto the center of the pan and quickly spread it into a thin, even circle.
  • Cook for 2-3 minutes on one side until the edges crisp and the top is set, then carefully flip and cook for another 1-2 minutes until golden brown.
  • Remove the cooked crepe and repeat the process with the remaining batter, adding oil as needed between each crepe.

Notes

For extra flavor, serve these crepes with a side of chutney or yogurt. You can also experiment with different spices in the batter to customize the taste to your liking.
