  • 1 pound chicken hearts trimmed
  • 2 tablespoons olive oil
  • 1 tablespoon ground cumin
  • 1 teaspoon smoked paprika
  • 1/2 - 1 teaspoon cayenne pepper
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon onion powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

  • Fresh cilantro or parsley for garnish

Instructions
 

Preparation

  • Rinse and pat dry the chicken hearts, then trim any excess fat or stringy bits.
  • Combine olive oil, cumin, paprika, cayenne, garlic powder, onion powder, salt, and black pepper in a bowl to create a marinade paste.
  • Toss the chicken hearts with the spice mixture, ensuring they are well coated, then refrigerate for 30 minutes to 4 hours.

Cooking

  • Soak wooden skewers if using, then thread 4-5 chicken hearts onto each, leaving space for even cooking.
  • Preheat your grill to medium-high (400°F/200°C) or a cast-iron skillet over medium-high heat, then lightly oil the cooking surface.
  • Cook skewers for 2-3 minutes per side until charred and cooked through; chicken hearts cook quickly and should be firm.
  • Remove from heat, let rest for a minute, and serve immediately, garnished with cilantro or parsley and lemon wedges.

Notes

Marinating the chicken hearts for longer will result in a more intense flavor. Be careful not to overcook the hearts, as they can become tough. Serve with a side of rice or a fresh salad for a complete meal.
