Ingredients
  

Spicy Honey Ginger Chicken

  • 1.5 lbs boneless, skinless chicken thighs or breasts, cut into 1-inch pieces
  • 2 tablespoons honey
  • 2 tablespoons soy sauce low sodium preferred
  • 1 tablespoon fresh ginger, grated
  • 2 cloves garlic, minced
  • 1 tablespoon sriracha or more, to taste, for extra heat
  • 1 tablespoon rice vinegar
  • 1 teaspoon sesame oil
  • 1 tablespoon olive oil or avocado oil, for cooking
  • sesame seeds for garnish
  • chopped green onions for garnish

Yum Yum Sauce

  • ½ cup mayonnaise
  • 2 tablespoons water
  • 1 tablespoon rice vinegar
  • 1 tablespoon granulated sugar
  • ½ teaspoon paprika
  • ¼ teaspoon garlic powder
  • cayenne pepper optional, for a little extra kick

For serving

  • Cooked rice jasmine, brown, or cauliflower rice all work wonderfully
  • Steamed or stir-fried vegetables broccoli, bell peppers, snow peas, carrots are great choices

Instructions
 

Marinate the Chicken

  • Combine honey, soy sauce, ginger, garlic, sriracha, rice vinegar, and sesame oil in a bowl, then add chicken and toss to coat. Refrigerate for 20 minutes to 2 hours.

Make the Yum Yum Sauce

  • Whisk together mayonnaise, water, rice vinegar, sugar, paprika, garlic powder, and optional cayenne pepper until smooth. Adjust seasonings as needed and set aside.

Cook the Chicken

  • Heat olive or avocado oil in a skillet over medium-high heat. Add chicken in a single layer and cook for 3-5 minutes per side until cooked through and golden brown.

Assemble the Bowls

  • Divide cooked rice among bowls, then top with the cooked chicken and chosen vegetables.

Garnish and Serve

  • Drizzle generously with Yum Yum Sauce, then garnish with optional sesame seeds and green onions. Serve immediately.

Notes

For meal prep, you can cook the chicken and rice ahead of time. Store the Yum Yum Sauce separately and add it just before serving to maintain freshness and texture. Adjust the sriracha and cayenne pepper amounts to your desired spice level. Using low-sodium soy sauce helps control the overall sodium content of the dish.
