Classic Spinach Dip in Bite-Sized Pinwheels

  • 8 oz cream cheese softened
  • 1/2 cup sour cream
  • 1/4 cup grated Parmesan cheese
  • 1/4 teaspoon garlic powder
  • Pinch red pepper flakes (optional)

  • Black pepper to taste
  • 1 puff pastry, thawed (17.3 oz) sheet, or 2 cans (8 oz each) refrigerated crescent roll dough
  • 1 large egg beaten (for an egg wash, if using puff pastry)

Preparation

  • Thaw the frozen chopped spinach and squeeze out all excess liquid using a clean kitchen towel.
  • Combine the drained spinach, softened cream cheese, sour cream, Parmesan cheese, garlic powder, and optional red pepper flakes in a bowl; mix until smooth, then season with salt and pepper.
  • For puff pastry, unfold and roll to a 10x12-inch rectangle; for crescent roll dough, unroll and press seams to form two large rectangles.
  • Evenly spread the spinach mixture over the dough surface, leaving a 1/2-inch border clean on one long edge for sealing.
  • Starting from a long edge, carefully and tightly roll up the dough with the filling.
  • Wrap the rolled dough in plastic wrap and refrigerate for at least 30 minutes to firm it up for easier slicing.
  • Preheat the oven to 375°F (190°C), line a baking sheet with parchment paper, and slice the chilled roll into 1/2-inch thick rounds to yield about 24 pinwheels.
  • Arrange the pinwheels on the prepared baking sheet, leaving space between them, and brush with egg wash if using puff pastry.
  • Bake for 18-22 minutes until golden brown, puffed, and the filling is bubbly.
  • Let the pinwheels cool on the baking sheet for a few minutes before serving warm or at room temperature.

Notes

Chilling the dough is an important step to ensure the pinwheels hold their shape and are easier to slice. For a spicier kick, increase the amount of red pepper flakes or add a dash of hot sauce to the filling. These pinwheels are great for meal prepping; you can prepare the roll ahead of time and bake them just before serving.
