  • 1.5 lbs salmon fillet skin-on or off
  • 1 tbsp olive oil
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/2 tsp garlic powder
  • 2 cups uncooked brown rice
  • 1 head broccoli cut into florets
  • 2 bell peppers any color, sliced
  • 1 red onion cut into wedges
  • 1 tbsp olive oil for veggies

  • 1/4 cup teriyaki sauce
  • 1 tbsp sesame seeds
  • 2 green onions sliced

  • Cook the brown rice according to the package directions.
  • Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper. Pat the salmon dry, then drizzle with olive oil and season with salt, pepper, and garlic powder before placing it on the prepared baking sheet.
  • On a separate baking sheet, toss the broccoli, bell peppers, and red onion with olive oil, salt, and pepper.
  • Roast both baking sheets in the oven; the salmon for 12-15 minutes until cooked through, and the vegetables for 15-20 minutes until tender-crisp.
  • Serve the cooked rice, roasted vegetables, and salmon in a bowl. Drizzle with teriyaki sauce and garnish with sesame seeds and sliced green onions.

Notes

For extra flavor, marinate the salmon in teriyaki sauce for 15-30 minutes before baking. You can also customize your bowl with other vegetables like asparagus or snap peas.
