Equipment

  • oven
  • loaf pan or baking sheet
  • large mixing bowl
  • whisk
  • small bowl

Ingredients

Meatloaf Base

  • 1.5 lbs ground beef (80/20 lean-to-fat ratio recommended)
  • 1 packet dry onion soup mix
  • 1/2 cup plain breadcrumbs

Optional Glaze

  • 1/2 cup ketchup
  • 2 tablespoons brown sugar
  • 1 tablespoon apple cider vinegar
  • 1 teaspoon Dijon mustard

Instructions

Preparation

  • Preheat your oven to 350°F (175°C) and lightly grease a loaf pan or line a baking sheet with parchment paper.
  • In a large mixing bowl, combine the ground beef, dry onion soup mix, and plain breadcrumbs.
  • Gently mix the ingredients with your hands until just combined, being careful not to overmix.
  • Transfer the mixture to the prepared loaf pan or shape it into a free-form loaf on the baking sheet.

Glaze (Optional)

  • If using the glaze, whisk together ketchup, brown sugar, apple cider vinegar, and Dijon mustard in a small bowl.
  • Spread about half of the prepared glaze over the top of the meatloaf before baking.

Baking

  • Bake for 45-55 minutes, or until the internal temperature reaches 160°F (71°C).
  • If glazing, spread the remaining glaze over the meatloaf during the last 15 minutes of baking.
  • Remove from oven and let rest for 5-10 minutes before slicing.

Notes

For best results, do not overmix the meatloaf mixture, as this can lead to a tough texture. Be sure to let the meatloaf rest before slicing to allow the juices to redistribute, ensuring a tender and flavorful slice.
