Comforting Saucy Baked Eggs with Spiced Tomatoes

  • 1 (14.5 oz) can Canned Diced Tomatoes undrained
  • 1 small Onion finely chopped
  • 2 cloves Garlic minced
  • 1 Bell Pepper any color, diced
  • 2 tablespoons Olive Oil

Spices & Seasonings

  • 1 teaspoon Cumin
  • 1 teaspoon Smoked Paprika
  • ½ teaspoon Chili Powder adjust to taste
  • Salt to taste
  • Black Pepper to taste

Garnish & Serving

  • Fresh Parsley or Cilantro for garnish (optional)
  • Crusty Bread or Pita for serving

Cooking Steps

  • Heat olive oil in an oven-safe skillet over medium heat. Sauté chopped onion and bell pepper for 5-7 minutes until softened, then stir in minced garlic and spices for one minute until fragrant.
  • Pour in the undrained diced tomatoes and bring to a gentle simmer. Reduce heat to low, cook for 10 minutes to thicken the sauce and meld flavors, then season with salt and pepper.
  • Create six indentations in the tomato sauce using a spoon, and carefully crack one egg into each indentation.
  • Transfer the skillet to a preheated oven at 375°F (190°C) and bake for 10-15 minutes, until the egg whites are set and yolks are runny.
  • Garnish with fresh parsley or cilantro if desired, and serve hot directly from the skillet with crusty bread or pita for dipping.

Notes

For extra heat, add a pinch of red pepper flakes with the other spices.
