  • 4 slices Thick-sliced bread challah, brioche, or day-old white bread
  • 1 cup Pumpkin puree 100% pumpkin, not pie filling
  • 2 Large eggs
  • 0.5 cup Milk dairy or non-dairy
  • 2 tablespoons Brown sugar
  • 1 teaspoon Vanilla extract
  • 1 teaspoon Ground cinnamon
  • 0.5 teaspoon Ground nutmeg
  • 0.25 teaspoon Ground ginger
  • Salt Pinch
  • 1 tablespoon Butter or oil for pan-frying

Preparation

  • In a shallow dish, whisk together pumpkin puree, eggs, milk, brown sugar, vanilla extract, cinnamon, nutmeg, ginger, and salt until smooth.
  • Heat a large non-stick skillet over medium heat and add butter or oil until shimmering.
  • Dip each bread slice into the pumpkin mixture for 20-30 seconds per side.
  • Transfer soaked bread to the hot skillet and cook for 3-4 minutes per side until golden brown and cooked through.
  • Add more butter or oil as needed, repeating the soaking and cooking process for remaining slices.
  • Serve warm with desired toppings like maple syrup, whipped cream, or powdered sugar.

Notes

For extra flavor, use a spiced rum or bourbon extract in place of vanilla. You can also add a pinch of clove for more depth of flavor. This recipe can be easily doubled or tripled to feed a crowd. It pairs well with a side of crispy bacon or sausage.
