  • 1 cup grated Parmesan cheese plus more for garnish (good quality, fresh-grated if possible!)
  • ¼ cup cream cheese softened (first hack!)
  • 2 tbsp unsalted butter
  • 1 tsp cornstarch mixed with 1 tbsp cold water (second hack!)
  • ½ tsp secret spice blend (garlic powder, onion powder, a pinch of nutmeg, white pepper) (third hack!)
  • Fresh parsley chopped, for garnish (fourth hack!)
  • Salt and freshly ground black pepper to taste

  • Season chicken breasts with salt, pepper, and garlic powder, then sear in olive oil in a large skillet until golden brown and cooked through.
  • While the chicken cooks, boil fettuccine in salted water until al dente, reserving about 1 cup of pasta water before draining.
  • In the same skillet, melt butter and sauté minced garlic until fragrant, building the sauce base with the browned bits of flavor.
  • Whisk in heavy cream and milk, bring to a gentle simmer, then reduce heat and continuously whisk in softened cream cheese until smooth.
  • Stir in Parmesan cheese until melted, then whisk in the cornstarch slurry for a silky sauce; add the secret spice blend, salt, and pepper, simmering until creamy and thick.
  • Add cooked chicken and drained pasta to the sauce, tossing gently to coat everything evenly; add reserved pasta water if the sauce is too dry.
  • Serve immediately, garnished generously with fresh chopped parsley and extra grated Parmesan cheese.
