Creamy Crockpot Chicken Tortilla Soup

This creamy crockpot chicken tortilla soup is an easy and delicious meal, perfect for a weeknight dinner. Simply combine all ingredients in a slow cooker and let it simmer to perfection.

Ingredients
  

Main Ingredients

  • 1.5-2 lbs boneless, skinless chicken breasts or thighs around 1.5-2 lbs
  • 4-6 cups chicken broth low sodium preferred
  • 1 can diced tomatoes 14.5 oz, undrained, or fire-roasted diced tomatoes
  • 1 can black beans 15 oz, rinsed and drained
  • 1 can corn 15 oz, drained, or 1.5 cups frozen corn
  • 1 yellow onion medium, chopped
  • 2-3 cloves garlic minced
  • 1 can diced green chilies 4 oz, undrained

Spices & Flavorings

  • 1 tbsp chili powder
  • 1 tsp cumin
  • 1/2 tsp smoked paprika
  • 1/4 tsp cayenne pepper optional
  • 1-2 limes for juice and wedges
  • 1/4 cup fresh cilantro chopped, plus more for garnish

For Creamy Version

  • 1/2 cup heavy cream or cream cheese or 4 oz cream cheese, softened

Instructions
 

Preparation

  • Lightly grease the inside of your crockpot with cooking spray or oil.
  • Place chicken, onion, garlic, tomatoes, black beans, corn, and green chilies at the bottom of the slow cooker.
  • Sprinkle chili powder, cumin, smoked paprika, and cayenne pepper evenly over the ingredients.

Cooking

  • Pour enough chicken broth to mostly cover the chicken and vegetables.
  • Cover and cook on low for 6-8 hours or on high for 3-4 hours until chicken is cooked through and easily shreds.
  • Remove cooked chicken from the slow cooker, shred it with two forks, and return it to the soup.

Finishing Touches

  • Stir in heavy cream or softened cream cheese until fully melted and incorporated for a rich and smooth consistency.
  • Stir in fresh lime juice and chopped cilantro, then taste and adjust seasonings as needed.
  • Ladle hot soup into bowls and garnish generously with your favorite toppings.

Notes

This soup is even better the next day! You can adjust the spice level by adding more or less cayenne pepper. Serve with your favorite toppings like shredded cheese, sour cream, avocado, or tortilla strips.
