  • 1.5 lbs boneless, skinless chicken breasts or thighs
  • 1 cup chicken broth low sodium
  • 8 oz heavy cream
  • 4 oz cream cheese softened
  • 6 fresh garlic minced
  • 1/2 cup freshly grated Parmesan cheese plus more for garnish
  • 1 tsp Italian seasoning
  • Salt and freshly ground black pepper to taste
  • 1 tbsp cornstarch optional, for thickening
  • 2 tbsp cold water optional, for thickening
  • 1/4 cup fresh parsley chopped, for garnish

Preparation

  • Pat dry and season your chicken pieces lightly with salt and pepper.
  • Whisk together chicken broth, heavy cream, softened cream cheese, minced garlic, and Italian seasoning until smooth.
  • Place seasoned chicken in the slow cooker and pour the cream sauce mixture over it.
  • Cook on low for 3-4 hours or on high for 2-3 hours, until the chicken is cooked through and easily shreds.
  • Stir in grated Parmesan until melted, and if desired, thicken the sauce with a cornstarch slurry by cooking for another 15-20 minutes.
  • Optionally, shred the chicken before returning it to the sauce, or serve whole with sauce.
  • Garnish with fresh chopped parsley just before serving.

Notes

Cooking times may vary depending on your slow cooker and the thickness of the chicken. For a richer flavor, you can brown the chicken slightly in a pan before adding it to the slow cooker.
