  • 2 lbs boneless, skinless chicken breasts or thighs
  • 1 can (10.75 oz) condensed cream of chicken soup
  • 1 package (8 oz) cream cheese, softened
  • 1/2 cup chicken broth
  • 4-6 cloves garlic, minced or 2 tsp garlic powder
  • 1/2 cup grated Parmesan cheese plus more for serving
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon red pepper flakes optional
  • 12 oz uncooked pasta penne, rotini, or fettuccine
  • 1/2 cup milk or heavy cream for thinning, if needed
  • Fresh parsley, chopped for garnish

  • Place the chicken in the slow cooker, then whisk together the cream of chicken soup, cream cheese, chicken broth, minced garlic, Parmesan cheese, Italian seasoning, black pepper, and red pepper flakes. Pour this mixture over the chicken in the slow cooker.
  • Cover the slow cooker and cook the chicken on low for 4-6 hours or on high for 2-3 hours, until the chicken is tender.
  • Remove the cooked chicken from the slow cooker and shred it. Return the shredded chicken to the slow cooker and stir it into the sauce.
  • Add the uncooked pasta to the slow cooker and stir to submerge it in the sauce. If the sauce appears too thick, add 1/2 cup of milk or heavy cream.
  • Increase the slow cooker setting to high and continue to cook for 20-30 minutes, or until the pasta is tender, stirring occasionally.
  • Ladle the pasta and chicken into bowls, then garnish with extra Parmesan cheese and fresh chopped parsley before serving.

Notes

For best results, use fresh garlic. If using garlic powder, reduce the amount to 2 teaspoons. Feel free to adjust the amount of red pepper flakes to your spice preference. Different types of pasta may require slightly different cooking times, so check for doneness towards the end of the cooking process.
