  • 1.5 - 2 lbs boneless, skinless chicken thighs or breasts
  • 1 cup oil-packed sun-dried tomatoes, drained reserve some oil if desired
  • 5 oz fresh spinach
  • 1/2 cup heavy cream
  • 1.5 cups chicken broth
  • 4-5 cloves garlic, minced
  • 1 medium yellow or white onion, diced
  • 2 tsp Italian seasoning
  • Salt and black pepper to taste
  • 1 tbsp olive oil or reserved sun-dried tomato oil

Garnish

  • Parmesan cheese for serving, optional

Instructions
 

Preparation

  • Pat chicken dry and season with salt, pepper, and Italian seasoning.
  • Heat oil in a skillet and sear chicken for 2-3 minutes per side until browned to develop flavor.

Slow Cook

  • Transfer seared chicken to the slow cooker, add onion, garlic, and sun-dried tomatoes, and pour in chicken broth.
  • Cook on low for 3-4 hours or high for 2-3 hours until chicken is tender.
  • Stir in heavy cream and fresh spinach.
  • Continue cooking for 15-20 minutes on high until spinach wilts and sauce thickens.

Serving

  • Taste and adjust seasoning with salt and pepper.
  • Serve hot, garnished with fresh basil or Parmesan cheese if desired.

Notes

For extra flavor, reserve some oil from the sun-dried tomatoes to sear the chicken. The cooking times for the slow cooker may vary, so adjust as needed until the chicken is easily shredded.
