For the Pasta

  • 12 ounces fettuccine pasta
  • 2 quarts water
  • 1 teaspoon salt

For the Sauce

  • 2 tablespoons olive oil
  • 2 cloves garlic minced
  • 1 shallot finely chopped
  • ½ cup sun-dried tomatoes packed in oil, drained and chopped
  • ½ cup vegetable broth
  • 1 cup heavy cream
  • ½ cup Parmesan cheese freshly grated, plus more for serving
  • ½ teaspoon dried oregano
  • ¼ teaspoon red pepper flakes optional
  • 2 tablespoons fresh basil chopped, for garnish
  • Salt and black pepper to taste

Instructions
 

Prep the Shrimp

  • Toss peeled and deveined shrimp with olive oil, salt, black pepper, and garlic powder, then set aside.

Cook the Pasta

  • Bring salted water to a boil, add fettuccine, and cook until al dente; reserve 1 cup of pasta water before draining.

Sauté Aromatics

  • Heat olive oil in a large skillet, then cook minced garlic and chopped shallot for 2-3 minutes until fragrant.

Build the Creamy Sauce

  • Add sun-dried tomatoes and cook for 1 minute; pour in vegetable broth, simmer for 2-3 minutes to reduce, then stir in heavy cream, oregano, and red pepper flakes, bringing to a gentle simmer.

Cook the Shrimp

  • Add seasoned shrimp to the simmering sauce and cook for 2-3 minutes per side until pink; remove and set aside to avoid overcooking.

Combine All Elements

  • Stir Parmesan cheese into the sauce until melted, then add the cooked pasta and toss to coat evenly. Use reserved pasta water to adjust sauce consistency if needed.

Final Touches and Plating

  • Return the cooked shrimp to the skillet, toss gently to combine, and season with salt and black pepper to taste. Serve immediately, garnished with fresh basil and additional Parmesan cheese.
