  • 2 tablespoons olive oil
  • 1 small onion or shallots, finely diced
  • 2-3 cloves garlic, minced
  • 5 ounces fresh spinach
  • 1 cup heavy cream
  • 1/2 cup vegetable broth or chicken broth
  • 1/2 cup grated Parmesan cheese
  • 4 ounces crumbled feta cheese
  • Salt and freshly ground black pepper to taste

Cooking Steps

  • Cook gnocchi in boiling salted water according to package directions until they float, then transfer to a saucepan or drain, reserving some pasta water.
  • Heat olive oil in a large skillet over medium heat and sauté diced onion or shallots for 3-5 minutes until softened.
  • Stir in minced garlic for one minute until fragrant, then add spinach and cook until completely wilted, about 2-3 minutes.
  • Pour in heavy cream and broth, bring to a gentle simmer, then reduce heat to low and stir in Parmesan cheese until melted and sauce thickens.
  • Add cooked gnocchi to the sauce, gently fold in crumbled feta, and cook for another 1-2 minutes to meld flavors and heat through.
  • Season with salt and pepper to taste, garnish with fresh herbs if desired, and serve immediately.

Notes

For extra flavor, roast the gnocchi instead of boiling them. This will give them a slightly crispy texture. You can also add other vegetables like cherry tomatoes or mushrooms to the sauce.
