Cheesecake Mixture

  • 8 ounces full-fat cream cheese, softened
  • 1 cup creamy peanut butter
  • 1 cup powdered sugar, sifted
  • 1 teaspoon vanilla extract

Coating (Optional)

  • 1/2 cup finely chopped peanuts

Preparation

  • In a medium mixing bowl, beat the softened cream cheese with an electric mixer until it is light and fluffy, which should take 1-2 minutes.
  • Scrape down the sides of the bowl, then add the peanut butter and beat until combined and smooth.
  • Gradually add the sifted powdered sugar and vanilla extract, starting on low speed and increasing to medium-high until the mixture is completely smooth and creamy.
  • Cover the bowl with plastic wrap and refrigerate for 1-2 hours, or until the mixture is firm enough to roll.

Forming and Serving

  • Once chilled, use a small cookie scoop or spoon to portion out about 1 tablespoon per ball, then roll each portion into smooth, uniform balls.
  • If desired, roll the balls in finely chopped peanuts or your preferred coating.
  • Place the coated balls on a parchment-lined baking sheet or plate and refrigerate for another 30 minutes to an hour, or until firm.
  • Serve the cheesecake poppers cold and enjoy your delicious treat.

Notes

For extra flavor, you can add a pinch of salt to the peanut butter mixture. If you don't have an electric mixer, you can use a sturdy whisk, but it will require more effort to get a smooth consistency. Feel free to experiment with different coatings, such as cocoa powder or melted chocolate, for variety.
